"CORONA DE OSTRAS SOBRE QUINUA Y TUNTA", Nombre sugestivo con el que se presentó este plato, ensayando por primera vez una combinación de sabores entre la quínua real, la tunta, el queso parmesano y la ostra envuelta en acelga marinada en vinagre de plátano, con un acabado final en el que se "pintó" el plato con una salsa de Koa.
Un encuentro de sabores del Altiplano Andino con la Ostra de la costa Atlántica. Una línea que con seguridad debe desarrollarse con más frecuencia hasta logarar el equilibrio y la armonía perfectas. Un aplauso para el cocinero Boliviano que colocó en el mapa de la gastronomía internacional su cocina de "autor" y toda su alquímia traida desde las alturas del lago titicaca.
